Christmas cooking!

My housemate and I decided to kick off the festive season with some fun Christmas cooking! We trawled through Westfield Bondi Junction searching for the perfect Christmas tree cookie-cutter and some royal icing mix (found at that homewares shop on the top floor with the big cake-decorating section) then we headed home to cook up a storm.

The raw cookie dough requires two different refridgeration periods, once after we mixed the dough and again after we cut out the shapes. Unfortunately I got distracted and the tree-shaped cutouts ended up spending the entire weekend languishing in the fridge! Luckily they weren't too dodgy when I rediscovered them, so I popped them in the oven and once cooled, got to work on them with the icing. I used a resealable sandwich bag with a tiny corner cut out to apply the icing, and decorated it with pink, blue, green and silver cachous. After the first few I had trouble thinking up interesting designs, so some of them ended up looking a bit over-the-top!

It was a great way to get into the Christmas spirit and we spent the next few days munching them down. I'm planning another batch this weekend - can't wait!
